- 4 large yellow onions, sliced
- 6 Tbsp. butter
- 1 (10.5 oz.) can beef broth
- 1 soup can Moselle wine
- 1 1/2 soup cans water
- 1/4 tsp. powdered thyme
- 1/4 tsp. pepper
- 1/2 tsp. garlic salt
- 4 to 6 oz. Mozzarella or Baby Swiss cheese, sliced
- 1 loaf French bread
Method
- Cut 4 slices bread, approximately one-inch thick.
- Place in 200° oven until crisp and dry (about an hour).
- Melt butter in large saucepan.
- Add onions and saute until soft, but not brown (takes about 20 minutes).
- Add beef broth, wine, water, thyme, salt and pepper.
- Simmer soup, covered, for one hour.
