Ingredients

  • 4 large yellow onions, sliced
  • 6 Tbsp. butter
  • 1 (10.5 oz.) can beef broth
  • 1 soup can Moselle wine
  • 1 1/2 soup cans water
  • 1/4 tsp. powdered thyme
  • 1/4 tsp. pepper
  • 1/2 tsp. garlic salt
  • 4 to 6 oz. Mozzarella or Baby Swiss cheese, sliced
  • 1 loaf French bread

Method

  • Cut 4 slices bread, approximately one-inch thick.
  • Place in 200° oven until crisp and dry (about an hour).
  • Melt butter in large saucepan.
  • Add onions and saute until soft, but not brown (takes about 20 minutes).
  • Add beef broth, wine, water, thyme, salt and pepper.
  • Simmer soup, covered, for one hour.
