Ingredients

  • 3 Tbsp. salad oil
  • 4 medium onions
  • 3 small cloves garlic
  • 1 peck ripe tomatoes, peeled and cut in chunks
  • 1 lb. mushrooms, sliced
  • 1 c. chopped parsley
  • 3 Tbsp. sugar
  • 3 Tbsp. salt
  • 4 tsp. oregano
  • 2 bay leaves

Method

  • In a large pot over medium heat in hot salad oil, cook onions and garlic about 10 minutes.
  • Add remaining ingredients.
  • Heat to boiling.
  • Reduce heat to low.
  • Cover and simmer for about 2 hours. Discard bay leaves.
  • Ladle into freezer containers.
  • Refrigerate until chilled.
  • Freeze.
