Ingredients
- 3 Tbsp. salad oil
- 4 medium onions
- 3 small cloves garlic
- 1 peck ripe tomatoes, peeled and cut in chunks
- 1 lb. mushrooms, sliced
- 1 c. chopped parsley
- 3 Tbsp. sugar
- 3 Tbsp. salt
- 4 tsp. oregano
- 2 bay leaves
Method
- In a large pot over medium heat in hot salad oil, cook onions and garlic about 10 minutes.
- Add remaining ingredients.
- Heat to boiling.
- Reduce heat to low.
- Cover and simmer for about 2 hours. Discard bay leaves.
- Ladle into freezer containers.
- Refrigerate until chilled.
- Freeze.
