Ingredients

  • 10 manicotti shells
  • 6 oz. Monterey Jack cheese
  • 10 frankfurters
  • 2 (15 oz.) cans chili and beans
  • 1 (7 1/2 oz.) can tomatoes and jalapenos

Method

  • Cook manicotti in boiling, salted water as per directions on package; set aside.
  • Shred 2/3 of cheese and set aside.
  • Cut remaining cheese into 4-inch strips.
  • Slit franks lengthwise and insert strip of cheese in each.
  • Place stuffed frank inside each cooked manicotti.
  • Combine beans, tomatoes and peppers.
  • Spoon 2 cups of mixture in 9 x 13 x 2-inch baking dish.
  • Top with remainder of mix.
  • Cover and bake at 350° for 25 minutes.
  • Uncover and sprinkle with cheese.
  • Bake 10 minutes more or until cheese is melted.
  • Serves 6.
