Ingredients
- 10 manicotti shells
- 6 oz. Monterey Jack cheese
- 10 frankfurters
- 2 (15 oz.) cans chili and beans
- 1 (7 1/2 oz.) can tomatoes and jalapenos
Method
- Cook manicotti in boiling, salted water as per directions on package; set aside.
- Shred 2/3 of cheese and set aside.
- Cut remaining cheese into 4-inch strips.
- Slit franks lengthwise and insert strip of cheese in each.
- Place stuffed frank inside each cooked manicotti.
- Combine beans, tomatoes and peppers.
- Spoon 2 cups of mixture in 9 x 13 x 2-inch baking dish.
- Top with remainder of mix.
- Cover and bake at 350° for 25 minutes.
- Uncover and sprinkle with cheese.
- Bake 10 minutes more or until cheese is melted.
- Serves 6.
