Ingredients

  • 1 c. coarsely ground cranberries
  • 2 c. flour
  • 1 1/4 c. sugar
  • 1 orange (juice and rind)
  • 1 egg
  • 1/2 c. chopped walnuts
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 1/2 tsp. soda
  • 2 Tbsp. melted butter

Method

  • Mix cranberries with 1/4 cup of the sugar and put aside.
  • Put orange through the food chopper.
  • Put juice and rind in measuring cup and fill with boiling water to make 1 cup.
  • Add the butter, egg and sifted dry ingredients; mix well.
  • Fold in nuts and cranberries; pour batter into a well-greased pan.
  • Bake for 1 hour at 350°.
  • Cool on rack.
