Ingredients

  • 1 doz. eggs
  • 1/2 stick melted butter
  • 1/4 c. milk
  • 4 strips bacon
  • 1/4 c. green peppers, diced
  • 1/4 c. green onions, sliced
  • 1/2 c. fresh sliced mushrooms
  • 1 c. cream of mushroom soup (undiluted)
  • 1/4 c. white sherry
  • 1/2 c. grated Cheddar cheese

Method

  • Fry bacon until crisp; crumble.
  • Beat eggs; add butter and milk.
  • Mix well.
  • Spread in a 9 x 13-inch greased glass baking dish.
  • Mix all remaining ingredients, except cheese, together and spread over egg mixture.
  • Top with cheese.
  • Cover and refrigerate overnight.
  • Bake uncovered at 250° for 50 minutes.
  • Serves 6.
