Ingredients

  • 1/3 cup rice flour, sifted
  • 1/3 cup flour, sifted
  • 1/3 cup sugar
  • 10 tbsp cold butter, chopped
  • 2 tbsp raspberry or other jam

Method

  • Preheat oven to 325°F. Line 2 baking sheets with parchment paper. For the dough, place flours, sugar, butter and a pinch of salt in a food processor and pulse until mixture is combined. Turn out onto a lightly floured work surface and knead into a ball. Roll out to 1/2 inch thickness.
  • Using a flower-shaped cookie cutter, cut cookies from the dough. While cutter is still in dough, use your thumb to make a dimple in the center of each flower. Place cookies on prepared baking sheets, leaving a little space between them. Fill dimples with jam. Bake 30 mins, or until lightly golden, switching position of baking sheets halfway through. Cool on baking sheets and serve.
