Ingredients
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1 tbsp. butter
- 1 can 16 oz. whole new potatoes, drained and sliced
- 1 can original style stewed tomatoes
- 1 can 15 oz. spinach, drained
- 1/4 c. grated parmesan cheese
Method
- Saute onion and pepper, in butter until soft. Add potatoes, saute 2 minutes. Add tomatoes. Cook over high heat until slightly thickened. Add spinach, heat through. Sprinkle with Cheese.
