Ingredients

  • 500 grams Salted herring roe
  • 200 ml Dashi stock
  • 160 ml Sake
  • 3 tbsp Mirin
  • 2 tbsp Usukuchi soy sauce
  • 1 Bonito flakes

Method

  • Immerse the salted herring roe in lightly salted water for 6-8 hours to remove the salt.
  • (Change out the salt water every 2-3 hours)
  • While the herring roe are soaking, make the marinade.
  • Add all of the ingredients into a pot and boil.
  • Then let it cool.
  • Carefully peel off the thin outer skin of the herring roe.
  • It's easy to do if you use a paper towel.
  • Place the herring roe into a plastic container, add the marinade, and let soak for half a day to one night.
  • Wrap the dried bonito flakes in a paper towel.
  • Soaking them together will increase the flavor.
