Ingredients

  • 1 lb. ground beef
  • 1 onion, chopped
  • 1/2 tsp. salt
  • pepper
  • 1 Tbsp. chili powder
  • 1 tsp. cumin
  • 2 Tbsp. cooking oil
  • 1 dozen corn tortillas
  • 1 can enchilada sauce
  • 1 c. grated cheese
  • chopped black olives, optional

Method

  • Brown beef and onion together.
  • Add seasonings.
  • Soften tortillas by dipping them in hot oil,
  • then drain on paper towels. Dip tortillas in heated enchilada sauce and layer on individual plates with meat mixture and cheese.
  • Place plates in a 350° oven to melt cheese.
  • Serve with shredded lettuce and tomato.
