- 1 lb. ground beef
- 1 onion, chopped
- 1/2 tsp. salt
- pepper
- 1 Tbsp. chili powder
- 1 tsp. cumin
- 2 Tbsp. cooking oil
- 1 dozen corn tortillas
- 1 can enchilada sauce
- 1 c. grated cheese
- chopped black olives, optional
Method
- Brown beef and onion together.
- Add seasonings.
- Soften tortillas by dipping them in hot oil,
- then drain on paper towels. Dip tortillas in heated enchilada sauce and layer on individual plates with meat mixture and cheese.
- Place plates in a 350° oven to melt cheese.
- Serve with shredded lettuce and tomato.
