Ingredients

  • 1 Tbsp. chopped onion
  • 1 c. cooked ground meat
  • 1/2 tsp. pepper
  • 1 c. cooked tomatoes, sliced
  • 1 c. cooked corn
  • 4 Tbsp. grated cheese
  • 1 Tbsp. shortening
  • 2 tsp. salt
  • 1/4 tsp. chili powder
  • 1 c. cooked string beans
  • 4 medium potatoes
  • 1 tsp. chopped parsley

Method

  • Cook chopped onion in fat until tender.
  • Add meat, 1 teaspoon salt, pepper and chili powder; blend.
  • Place in greased 1 1/2-quart casserole.
  • Place potatoes over meat.
  • Add a layer of string beans, then corn, sprinkling each layer with salt.
  • Place sliced tomatoes in layer over corn.
  • Top with cheese and parsley. Cover; bake at 350° for about 25 minutes.
  • Serves 6.
