Ingredients

  • 1 lb. haddock or cod (fresh or frozen)
  • water to poach fish (enough to just cover)
  • salt to taste
  • 4 medium potatoes (more if desired), peeled and sliced
  • 4 good sized onions, peeled and sliced
  • 3/4 stick butter or margarine
  • 1 qt. milk
  • 1/2 to 3/4 c. evaporated milk
  • salt and pepper to taste
  • parsley flakes

Method

  • In about 4-quart agate pot, put fish, salt and water to cover. Bring to boil and simmer until fish flakes easily.
  • Remove from stock and slice potatoes into fish stock.
