Ingredients
- 1 lb. haddock or cod (fresh or frozen)
- water to poach fish (enough to just cover)
- salt to taste
- 4 medium potatoes (more if desired), peeled and sliced
- 4 good sized onions, peeled and sliced
- 3/4 stick butter or margarine
- 1 qt. milk
- 1/2 to 3/4 c. evaporated milk
- salt and pepper to taste
- parsley flakes
Method
- In about 4-quart agate pot, put fish, salt and water to cover. Bring to boil and simmer until fish flakes easily.
- Remove from stock and slice potatoes into fish stock.
