Ingredients

  • 4 large ripe tomatoes
  • 1 large green pepper
  • 1 large onion (preferably red or sweet)
  • 3/4 c. vinegar
  • 3/4 c. water
  • 1 1/2 tsp. celery salt
  • 4 1/2 tsp. sugar
  • 1/8 tsp. mustard seed
  • 1/2 tsp. salt
  • 1/8 tsp. cayenne pepper
  • 1/8 tsp. black pepper

Method

  • Skin tomatoes and cut into quarters. Slice peppers into strips. Slice onion into thin rings. Arrange vegetables into neat sections in a large Pyrex bowl. Combine remaining ingredients in a saucepan and boil furiously for one minute. Pour over vegetables. Cool slightly and refrigerate. Just before serving, sliced cucumbers can be added.
