Ingredients

  • 1/4 c. instant potato granules
  • 1 1/2 c. sifted flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 c. sugar
  • 2 eggs
  • 1/4 c. molasses
  • 1 1/2 c. dried figs
  • 1/2 c. raisins
  • 1 1/2 c. chopped nuts
  • 1 1/2 c. quick oats
  • 1 c. shortening

Method

  • Make potatoes as directed on package; sift dry ingredients. Cream shortening and sugar; add eggs, molasses and mashed potatoes. Mix together fruits, nuts and oats and add alternately with dry ingredients.
  • Mix well.
  • Drop by teaspoon onto greased cookie sheet.
  • Bake at 375° for 10 to 12 minutes.
