- 3 c. cooked rice
- 1/2 c. 2% fat cottage cheese
- 1/2 c. 2% skim milk
- 1/2 c. bell peppers, chopped
- 1 (2 oz.) jar pimentos, chopped
- 1/2 tsp. salt
- 1 c. Cheddar cheese, grated
- nonstick vegetable coating
- paprika (optional)
Method
- Combine in a large mixing bowl the rice, cottage cheese, milk, peppers, pimentos, salt and 1/2 cup of the Cheddar cheese.
- Stir ingredients thoroughly until well mixed.
