Ingredients

  • 1 1/2 c. heavy cream
  • 1 1/2 c. fresh grated Parmesan cheese
  • 1/2 c. butter
  • 8 garlic cloves
  • 2 egg yolks
  • salt and white pepper
  • 1 lb. fettucini noodles

Method

  • Heat cream in medium saucepan; when it begins to simmer, stir in cheese a little at a time.
  • Stir continuously over low heat for about 10 minutes.
  • Add butter a little at a time.
  • When all butter is in and sauce is smooth, remove from heat and beat a small amount of it into the egg yolks; return the egg yolk mixture to the sauce and stir it in thoroughly with a wire whisk.
  • Season to taste with salt and pepper.
  • Mix with cooked noodles (al dente) and toss.
  • Sprinkle with parsley.
