Ingredients
- 1 1/2 c. heavy cream
- 1 1/2 c. fresh grated Parmesan cheese
- 1/2 c. butter
- 8 garlic cloves
- 2 egg yolks
- salt and white pepper
- 1 lb. fettucini noodles
Method
- Heat cream in medium saucepan; when it begins to simmer, stir in cheese a little at a time.
- Stir continuously over low heat for about 10 minutes.
- Add butter a little at a time.
- When all butter is in and sauce is smooth, remove from heat and beat a small amount of it into the egg yolks; return the egg yolk mixture to the sauce and stir it in thoroughly with a wire whisk.
- Season to taste with salt and pepper.
- Mix with cooked noodles (al dente) and toss.
- Sprinkle with parsley.
