- 2 lbs kielbasa or 2 lbs smoked sausage, sliced
- 1 (20 ounce) can pineapple chunks in juice, drained and juice reserved
- 1 cup reserved pineapple juice
- 14 cup lemon juice
- 3 tablespoons cornstarch
- 12 cup brown sugar
- 14 teaspoon salt
- 1 large green pepper, cut into chunks
- 1 large onion, cut into chunks
- 12 cup maraschino cherry, drained (yes, really)
Method
- Combine juices, brown sugar and cornstarch.
- Boil until thick.
- Stir in salt.
- Spray the crock pot with non-stick cooking spray.
- Put sausage, fruit and veggies in the crock pot, add the juice mixture.
- Cook on low 4 hours.
