Ingredients

  • 2 lbs kielbasa or 2 lbs smoked sausage, sliced
  • 1 (20 ounce) can pineapple chunks in juice, drained and juice reserved
  • 1 cup reserved pineapple juice
  • 14 cup lemon juice
  • 3 tablespoons cornstarch
  • 12 cup brown sugar
  • 14 teaspoon salt
  • 1 large green pepper, cut into chunks
  • 1 large onion, cut into chunks
  • 12 cup maraschino cherry, drained (yes, really)

Method

  • Combine juices, brown sugar and cornstarch.
  • Boil until thick.
  • Stir in salt.
  • Spray the crock pot with non-stick cooking spray.
  • Put sausage, fruit and veggies in the crock pot, add the juice mixture.
  • Cook on low 4 hours.
