Ingredients
- 1 (8 oz.) can tomato sauce, divided
- 1/4 c. brown sugar
- 1 tsp. prepared mustard
- 2 eggs, lightly beaten
- 1 medium onion, minced
- 1/4 c. cracker crumbs
- 2 lb. ground beef (lean)
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
Method
- In a small bowl, combine tomato sauce, brown sugar and mustard;
- set aside.
- In a large mixing bowl, combine eggs, onion, cracker crumbs, ground beef, salt and pepper. Add 1/2 cup tomato sauce mixture and stir.
- Place meat mixture in a glass ring mold or a 2-quart microwave-safe round casserole; pour remaining tomato sauce mixture over top of meat.
- Cook on High in microwave, uncovered, for 12 to 14 minutes; remove and let stand (covered) for 5 to 10 minutes before serving.
