Ingredients

  • 1 (8 oz.) can tomato sauce, divided
  • 1/4 c. brown sugar
  • 1 tsp. prepared mustard
  • 2 eggs, lightly beaten
  • 1 medium onion, minced
  • 1/4 c. cracker crumbs
  • 2 lb. ground beef (lean)
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper

Method

  • In a small bowl, combine tomato sauce, brown sugar and mustard;
  • set aside.
  • In a large mixing bowl, combine eggs, onion, cracker crumbs, ground beef, salt and pepper. Add 1/2 cup tomato sauce mixture and stir.
  • Place meat mixture in a glass ring mold or a 2-quart microwave-safe round casserole; pour remaining tomato sauce mixture over top of meat.
  • Cook on High in microwave, uncovered, for 12 to 14 minutes; remove and let stand (covered) for 5 to 10 minutes before serving.
