Ingredients

  • 2 egg whites
  • 1 c. sugar
  • 1 1/4 c. flour
  • 1/2 c. applesauce
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp. ground cloves
  • 1/4 tsp. allspice
  • 1/4 tsp. nutmeg
  • pinch of ginger
  • 1 Tbsp. lemon juice

Method

  • Preheat oven to 350°.
  • Mix in the ingredients one at a time, stirring well after each addition.
  • Pour batter into a 9 x 9-inch nonstick baking pan lightly coated with cooking spray and dusted with flour.
  • Bake 30 minutes.
  • Ice with Meringue Cream.
  • Fat-free serving size is 1/5 of cake.
