Ingredients
- 4 Tbsp. oil
- 1 slice salt pork, chopped
- some bacon
- 3 lb. onions, sliced thin
- 1/2 c. Parmesan cheese
- 2 eggs
- basil leaves
- salt and pepper to taste
- 2 c. plum tomatoes
- 1 qt. water
Method
- Place
- onions
- in
- hot oil about 10 minutes, keep stirring. Add basil leaves, pepper and salt to taste.
- Add 2 cups plum tomatoes after onions are limped.
- Add water and bring to a
- boil. Simmer 1/2 hour.
- Sprinkle Parmesan cheese and add 2 beaten eggs last.
- Pour them slowly; when cooked, serve hot.
