Ingredients

  • 4 Tbsp. oil
  • 1 slice salt pork, chopped
  • some bacon
  • 3 lb. onions, sliced thin
  • 1/2 c. Parmesan cheese
  • 2 eggs
  • basil leaves
  • salt and pepper to taste
  • 2 c. plum tomatoes
  • 1 qt. water

Method

  • Place
  • onions
  • in
  • hot oil about 10 minutes, keep stirring. Add basil leaves, pepper and salt to taste.
  • Add 2 cups plum tomatoes after onions are limped.
  • Add water and bring to a
  • boil. Simmer 1/2 hour.
  • Sprinkle Parmesan cheese and add 2 beaten eggs last.
  • Pour them slowly; when cooked, serve hot.
