Ingredients
- 2 large or 4 medium eggplant(sliced in 1/4 inch rounds)
- 2 large or 4 small green pepper(sliced with seeds)
- 2 onion(slice in 1/4 inch rounds)
- 1 1/2 lb ground beef
- 12oz can tomato sauce
- salt and pepper
Method
- ground beef and let cool
- to bottom of casserole dish layer slices of eggplant, green pepper and onion sprinkle with salt and pepper
- add 1/2 ground beef mixture
- continue with remaining layer of eggplant, green pepper, onion and ground beef, salt and pepper
- mix 1 can water with 12oz tomato sauce and pour over top
- cover with tin foil
- cook at 350 for 1 hour to 1 hour 10 mins
- chop with big spoon and serve over rice
