Ingredients

  • 2 large or 4 medium eggplant(sliced in 1/4 inch rounds)
  • 2 large or 4 small green pepper(sliced with seeds)
  • 2 onion(slice in 1/4 inch rounds)
  • 1 1/2 lb ground beef
  • 12oz can tomato sauce
  • salt and pepper

Method

  • ground beef and let cool
  • to bottom of casserole dish layer slices of eggplant, green pepper and onion sprinkle with salt and pepper
  • add 1/2 ground beef mixture
  • continue with remaining layer of eggplant, green pepper, onion and ground beef, salt and pepper
  • mix 1 can water with 12oz tomato sauce and pour over top
  • cover with tin foil
  • cook at 350 for 1 hour to 1 hour 10 mins
  • chop with big spoon and serve over rice
