Ingredients

  • 2 cups sugar
  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 cup oil
  • 4 eggs
  • 3 cups carrots, grated
  • 8 ounces cream cheese, room temperature
  • 12 cup butter, room temperature
  • 1 lb confectioners' sugar
  • 1 cup walnuts, chopped
  • 2 teaspoons vanilla extract

Method

  • Preheat oven to 350 degrees.
  • In a bowl combine sugar, flour, baking soda, cinnamon and salt.
  • Add oil and stir.
  • While stirring, add one egg at a time.
  • Pour mixture into two separate 9 inch round baking pans.
  • Bake for 25 minutes.
  • In another bowl, combine cream cheese, butter, confectionate sugar, nuts and vanilla until smooth.
  • When cake is done baking, and has cooled, cover with frosting and eat it all gone!
