Ingredients
- 2 cups sugar
- 2 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1 cup oil
- 4 eggs
- 3 cups carrots, grated
- 8 ounces cream cheese, room temperature
- 12 cup butter, room temperature
- 1 lb confectioners' sugar
- 1 cup walnuts, chopped
- 2 teaspoons vanilla extract
Method
- Preheat oven to 350 degrees.
- In a bowl combine sugar, flour, baking soda, cinnamon and salt.
- Add oil and stir.
- While stirring, add one egg at a time.
- Pour mixture into two separate 9 inch round baking pans.
- Bake for 25 minutes.
- In another bowl, combine cream cheese, butter, confectionate sugar, nuts and vanilla until smooth.
- When cake is done baking, and has cooled, cover with frosting and eat it all gone!
