Ingredients

  • 100 g semola dura (Pasta flour)
  • 1 egg
  • Pinch of salt
  • Pinch of sumac
  • 1 stalk of leek
  • 50 g feta
  • 10 g pine nuts

Method

  • Make pasta dough (using a roller or pasta machine) from the semola dura and the egg, mixing in the salt and sumac.
  • Chop up the leek and dive the feta.
  • Briefly roast the pine nuts, when they start to discolour, add the leak and some olive oil. When the leek is fried, add the feta and remove from heat.
  • Roll out the dough to 1 mm thickness, and cut 10 cm diameter circles out of the dough. Reroll any remains to use as much dough as you you can
  • Put a little bit of the leek-feta-mixture on each piece of though (no more than can sit comfortably in a 5 cm diameter circle).
  • Fold the circles and press them closed with a fork
  • Cook for about 4 minutes.
  • Serve with a little olive oil and basil for garnish.
