Ingredients
- 6 c. flour, divided
- 2 (1/4 oz.) pkg. yeast or 2 1/2 tsp.
- 1 Tbsp. sugar
- 2 tsp. salt
- 1/2 tsp. baking soda
- 2 c. warm skim milk (120~ to 130~)
- 1/2 c. warm water (120~ to 130~)
- corn meal
Method
- In large bowl, combine 3 cups flour, yeast, sugar, salt and baking soda. Stir in milk and water; mix well. Stir in remaining flour (batter will be soft). Do not knead. Spray 3 (13 ounce) coffee cans or 8 1/2 x 4 x 2-inch loaf pans with nonstick spray. Sprinkle with corn meal. Spoon batter in pans; sprinkle corn meal on top. Cover; let rise until doubled, about 45 minutes. Bake at 400° for 20 to 25 minutes or until golden brown. Remove from cans to cool on wire rack. Yield: 3 loaves.
