Ingredients

  • 12 to 16 slices white bread, crusts removed and cut into half of quarter triangles
  • 2 c. raspberries
  • 2 c. blueberries
  • 2 c. sliced strawberries
  • 1 c. all-fruit raspberry preserves
  • confectioners sugar
  • mint leaves (optional)
  • additional fresh fruit (optional)

Method

  • Line a deep 1 1/2 to 2-quart bowl with plastic wrap.
  • Line bottom and sides of bowl with about half the bread triangles, completely covering the surface so there are no gaps between bread slices.
  • In medium saucepan over high heat, combine berries and raspberry preserves; bring to a boil.
  • Reduce heat to medium and simmer fruit 5 minutes to release juices.
