- 12 to 16 slices white bread, crusts removed and cut into half of quarter triangles
- 2 c. raspberries
- 2 c. blueberries
- 2 c. sliced strawberries
- 1 c. all-fruit raspberry preserves
- confectioners sugar
- mint leaves (optional)
- additional fresh fruit (optional)
Method
- Line a deep 1 1/2 to 2-quart bowl with plastic wrap.
- Line bottom and sides of bowl with about half the bread triangles, completely covering the surface so there are no gaps between bread slices.
- In medium saucepan over high heat, combine berries and raspberry preserves; bring to a boil.
- Reduce heat to medium and simmer fruit 5 minutes to release juices.
