Ingredients

  • 1 onion, chopped
  • 1/2 green bell pepper, chopped
  • 3 Tbsp. butter
  • 2 (8 oz.) cans tomato sauce
  • 1/8 tsp. Tabasco sauce
  • 1 Tbsp. chili powder
  • 2 lb. ground beef
  • 8 oz. Velveeta or Cheddar cheese, shredded
  • 16 flour tortillas

Method

  • Saute the onion and green pepper in skillet until tender.
  • Add tomato sauce, Tabasco sauce and chili powder.
  • Simmer 30 minutes. Brown ground beef in skillet, stirring until ground beef is crumbly.
  • Drain.
  • Place 2 to 4 tablespoons of meat and equal amount of shredded cheese in center of each tortilla.
  • Roll up to enclose filling, securing with wooden picks.
  • Pour 1/2 cup of tomato sauce mixture in a 9 x 13-inch baking dish.
  • Arrange tortillas in dish; cover with remaining sauce . Bake at 350° for 30 minutes or microwave on Medium for 10 to 12 minutes.
  • Top with additional cheese.
