- 1 onion, chopped
- 1/2 green bell pepper, chopped
- 3 Tbsp. butter
- 2 (8 oz.) cans tomato sauce
- 1/8 tsp. Tabasco sauce
- 1 Tbsp. chili powder
- 2 lb. ground beef
- 8 oz. Velveeta or Cheddar cheese, shredded
- 16 flour tortillas
Method
- Saute the onion and green pepper in skillet until tender.
- Add tomato sauce, Tabasco sauce and chili powder.
- Simmer 30 minutes. Brown ground beef in skillet, stirring until ground beef is crumbly.
- Drain.
- Place 2 to 4 tablespoons of meat and equal amount of shredded cheese in center of each tortilla.
- Roll up to enclose filling, securing with wooden picks.
- Pour 1/2 cup of tomato sauce mixture in a 9 x 13-inch baking dish.
- Arrange tortillas in dish; cover with remaining sauce . Bake at 350° for 30 minutes or microwave on Medium for 10 to 12 minutes.
- Top with additional cheese.
