- 2 lb. ground beef
- 1 medium onion
- 1/4 tsp. garlic powder
- 1 can Rotel
- 1- 8 oz. can tomato sauce
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 pkg. taco seasoning mix
- 1/2 Tbsp. chili powder
- 1 pkg. corn tortillas
- 1 can cream of mushroom soup
- 3/4 c. milk
- 8 oz. shredded cheddar cheese
Method
- Brown ground beef with onion and garlic.
- Drain excess grease off. Add Rotel, tomato sauce, salt, pepper, taco seasoning mix, and chili powder.
- Let simmer on low heat for 4 to 5 minutes. Cover bottom of baking dish with corn tortillas (cut into wedges). Pour meat mixture over corn tortillas.
- Add another layer of corn tortillas to just cover top of meat mixture.
- Whisk milk and cream of mushroom soup together.
- Pour over the top of the corn tortillas.
- Add all cheese to the top.
- Bake at 350° for 40 minutes.
