Ingredients

  • 2 lb. ground beef
  • 1 medium onion
  • 1/4 tsp. garlic powder
  • 1 can Rotel
  • 1- 8 oz. can tomato sauce
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 pkg. taco seasoning mix
  • 1/2 Tbsp. chili powder
  • 1 pkg. corn tortillas
  • 1 can cream of mushroom soup
  • 3/4 c. milk
  • 8 oz. shredded cheddar cheese

Method

  • Brown ground beef with onion and garlic.
  • Drain excess grease off. Add Rotel, tomato sauce, salt, pepper, taco seasoning mix, and chili powder.
  • Let simmer on low heat for 4 to 5 minutes. Cover bottom of baking dish with corn tortillas (cut into wedges). Pour meat mixture over corn tortillas.
  • Add another layer of corn tortillas to just cover top of meat mixture.
  • Whisk milk and cream of mushroom soup together.
  • Pour over the top of the corn tortillas.
  • Add all cheese to the top.
  • Bake at 350° for 40 minutes.
