Ingredients
- 1/2 cup olive oil
- 1 medium onion/diced
- 3-4 diced cloves of garlic
- 1 lb. Italian sausage
- (removed from casing)
- crushed red pepper flakes
- salt to taste
- 1 med. eggplant/diced
- fresh shredded mozzarella
- Parmesan cheese
- 1 jar of Ragu tomato sauce
Method
- warm olive oil in skillet
- add onion cook until translucent
- add garlic,sausage,red pepper, salt
- Cook until tender/set aside
- Cook 1-lb. penne until tender
- drain then return to pot
- add eggplant mixture/mix
- Layer pasta/eggplant mixture with fresh shredded mozzarella and parmesan cheese
- Bake in 350 oven until warmed.
