Ingredients

  • 1/2 cup olive oil
  • 1 medium onion/diced
  • 3-4 diced cloves of garlic
  • 1 lb. Italian sausage
  • (removed from casing)
  • crushed red pepper flakes
  • salt to taste
  • 1 med. eggplant/diced
  • fresh shredded mozzarella
  • Parmesan cheese
  • 1 jar of Ragu tomato sauce

Method

  • warm olive oil in skillet
  • add onion cook until translucent
  • add garlic,sausage,red pepper, salt
  • Cook until tender/set aside
  • Cook 1-lb. penne until tender
  • drain then return to pot
  • add eggplant mixture/mix
  • Layer pasta/eggplant mixture with fresh shredded mozzarella and parmesan cheese
  • Bake in 350 oven until warmed.
