Ingredients
- 1 med. Eggplant
- 1 Red onion, chopped
- 1 cup grated cheese
- 1 egg, beaten
- 1/2 cup milk
- salt, pepper to taste
- bread crumbs, buttered
Method
- Peel eggplant, cut into small pieces, cover with water and salt and pepper.
- Boil until tender.
- Drain.
- Add cheese, egg, onion and milk.
- Put into buttered casserole dish, top with buttered bread crumbs. Bake at 350° for 1 hour.
