Ingredients
- 1 medium eggplant
- 3/4 cup milk
- 2 eggs, beaten
- 1/2 stick melted butter
- 1 med onion,chopped
- 2 cups dry bread crumbs
- 3/4 cup shredded cheddar
Method
- peel eggplant,cut into 1 inch cubes,cook in boiling water 8 mins,drain,add eggs,milk,butter,onion,bread crumbs and cheese,place into a greased casserole dish,bake at 300,1 hour,top with more cheese
