Ingredients
- eggplant
- salted water
- 1 c. chopped celery
- 1 small onion, chopped
- 1/4 lb. cheese, chopped
- 1/2 bell pepper, chopped
- 1 egg
- 1 c. milk
- 3 slices dry bread, chopped
Method
- Peel eggplant and boil in salted water until tender; drain. Mix mashed eggplant with celery, onion, bell pepper and egg.
- Put in buttered dish in layers with dry bread and cheese.
- Use salt and pepper to taste.
- Bake about 40 minutes or until golden brown.
