Ingredients
- 1 eggplant, peeled and cut into cubes
- 1/2 tsp. pepper
- 1 green pepper, chopped
- 2 tsp. salt
- 6 medium tomatoes, sliced
- 1 large onion, chopped
- 1/3 c. olive oil
- 1 tsp. oregano
Method
- Brown all ingredients except tomatoes in olive oil. Stir in seasoning.
- Alternate eggplant mixture with tomatoes in 1 1/2-quart casserole dish.
- Bake 40 minutes at 400°.
