Ingredients

  • 1 eggplant, peeled and quartered
  • 1/2 c. milk
  • 1 small chopped onion
  • 1 1/2 c. bread crumbs
  • 2 slices bread
  • 2 beaten eggs
  • 1 1/2 c. grated cheese
  • dash of salt and pepper

Method

  • Preheat oven to 400°.
  • Boil peeled and quartered eggplant in salt water until tender.
  • Soak 2 slices of bread in milk.
  • Mash eggplant with bread.
  • Add eggs, onion, salt and pepper.
  • Mix cheese with this and put in greased casserole dish. Sprinkle with bread crumbs. Bake at 400° for about 45 minutes.
