Ingredients

  • 1 cup flour
  • 1/4 tsp baking soda
  • pinch salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup margarine
  • 1/4 cup peanut butter
  • 4 egg yolks
  • 1/2 egg white
  • 1 cup creamy peanut butter
  • 1 1/2 tsp vanilla extract

Method

  • Preheat oven to 300F.
  • Cream together margarine, 1/4 cup PB, and two sugars.
  • (Use a fork)
  • Add egg yolks, 1 cup PB, and vanilla.
  • Mix well.
  • Sift in flour, baking soda, and salt.
  • Mix until just incorporated.
  • (Will be crumbly)
  • Form into patties and place 2 cm apart on a parchment lined tray; they don't spread much.
  • Press a cross hatch pattern into the cookies carefully, or they'll crumble.
  • Bake for 15 minutes.
