Ingredients

  • 1 (12 oz.) pkg. seasoned sausage
  • 1/4 c. green pepper
  • 1/4 c. onion
  • 8 eggs
  • 1/2 c. milk
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. shredded Cheddar cheese
  • 1 c. shredded Swiss cheese

Method

  • Crumble sausage into 2-quart casserole.
  • Add green pepper and onion.
  • Microwave at High 3 to 6 minutes or until meat is no longer pink.
  • Break sausage into small pieces; drain well.
  • Spread in 8 x 8-inch baking dish.
  • Set aside.
  • Beat egg, milk, salt and pepper in 2-quart casserole.
  • Reduce power to 50%.
  • Microwave 5 to 9 minutes or until eggs are set but still very moist, stirring every 2 minutes.
  • Pour eggs over sausage.
  • Sprinkle cheeses
  • over eggs.
  • Cover with wax paper.
  • Place an inverted saucer in oven. Microwave at 50% until center is set (10 to 12 minutes) but slightly moist on top, rotating 1/4 turn every 3 minutes.
  • Let stand covered 5 minutes.
