Ingredients

  • 8 large eggs, beaten
  • 12 lb mushroom, sliced
  • 12 cup chopped green onion
  • 4 slices bacon, cooked and diced (or 1/2 c. diced cooked ham)
  • 14 lb shredded cheese (such as Cheddar, Swiss, or Jarlsberg)

Method

  • Preheat oven to 350; coat a shallow 1-quart shallow casserole with cooking spray.
  • In a bowl, whisk the eggs, mushrooms, green onions, bacon, and cheese together.
  • Pour mixture into prepared casserole dish; bake, uncovered, for 20 minutes, or until set.
  • Cut into squares to serve.
