Ingredients
- 1/2 c. chopped onions
- 1/2 c. fat-free chicken or vegetable stock
- 3 c. coarsely chopped tomatoes
- 1 tsp. frozen apple juice concentrate
- 1/2 tsp. each: oregano, thyme and basil
- 1 tsp. garlic powder
- freshly ground pepper
Method
- Cook onions in stock until soft.
- Add remaining ingredients. Bring to boil.
- Cover and simmer 30 to 45 minutes.
- Makes 3 (1 1/2 cups).
