Ingredients
- 2 Eggs
- 1 ounce Feta Cheese
- 1/2 tablespoon Butter
- 1/4 cups Sweet Pepper Chopped
- 1/4 cups Onion Chopped
- 1/2 cups Tomato Sauce
- 1 teaspoon Basil
- 1 teaspoon Oregano
- 1 dash Cayenne Pepper
- 1 dash Pepper
- 1 teaspoon Cumin
Method
- Prep Peppers and Onion
- Heat butter in small skillet over medium heat. Sweat the peppers and onion until soft.
- While sweating the veggies get the remaining items together
- When veggies are done to your liking, add tomato sauce and all of the spices except for the cayenne pepper
- Lower heat to medium low, just so the sauce is simmering or bubbling just a little bit
- Add Feta to pan, now take the back of a spoon and make two small wells in the sauce. Crack the eggs into each well and sprinkle with cayenne pepper
- Put a lid on the pan, if you don't have one that fits just use any lid that is larger than your pan
- Check the eggs often. What you want is the yellow to be a deep yellow shade and all of the white to no longer be clear. The eggs will continue to cook a bit in your bowl.
- When eggs are done serve in bowl
