Ingredients

  • 2 Eggs
  • 1 ounce Feta Cheese
  • 1/2 tablespoon Butter
  • 1/4 cups Sweet Pepper Chopped
  • 1/4 cups Onion Chopped
  • 1/2 cups Tomato Sauce
  • 1 teaspoon Basil
  • 1 teaspoon Oregano
  • 1 dash Cayenne Pepper
  • 1 dash Pepper
  • 1 teaspoon Cumin

Method

  • Prep Peppers and Onion
  • Heat butter in small skillet over medium heat. Sweat the peppers and onion until soft.
  • While sweating the veggies get the remaining items together
  • When veggies are done to your liking, add tomato sauce and all of the spices except for the cayenne pepper
  • Lower heat to medium low, just so the sauce is simmering or bubbling just a little bit
  • Add Feta to pan, now take the back of a spoon and make two small wells in the sauce. Crack the eggs into each well and sprinkle with cayenne pepper
  • Put a lid on the pan, if you don't have one that fits just use any lid that is larger than your pan
  • Check the eggs often. What you want is the yellow to be a deep yellow shade and all of the white to no longer be clear. The eggs will continue to cook a bit in your bowl.
  • When eggs are done serve in bowl
