Ingredients

  • 1 As many halved Roma's as you can fit on a baking sheet
  • 1 Enough Olive oil to drizzle liberally over tomatoes
  • 1 Sea salt, to taste
  • 1 Fresh ground pepper, to taste
  • 1 Onion powder, to taste
  • 1 Balsamic vinegar, optional
  • 1 Sprinkle of Italian seasoning. Optional.

Method

  • Heat oven to 200 F.
  • Cut tip ends off of tomatoes, then slice in half.
  • Place on baking sheet cut side up.
  • Drizzle sliced tomatoes liberally with olive oil.
  • Sprinkle with sea salt, fresh ground pepper & onion powder.
  • Bake for 2-4 hrs until tomatoes are semi dehydrated.
  • More or less depending on how you like them.
  • Sprinkle with Italian seasoning at the end to add a nice flavor.
  • Optional....but GOOD.
  • Drizzle a bit of balsamic vinegar about 1/2 way or at the end of baking.
  • Vinegar is optional but gives a bit more depth of flavor.
