- 1 onion, minced
- 1 lg. carrot, minced
- 2 cloves garlic, chopped
- 2 tbsp. extra virgin olive oil
- 2 lg. (28 ounce.) cans crushed tomatoes
- 1 tbsp. tomato paste
- 1 teaspoon dry basil
- 1 teaspoon oregano
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 pkg. spaghetti
- Grated Parmesan cheese
Method
- Cook and stir onions, carrots and garlic in warm oil in large skillet over medium heat till tender but NOT browned.
- Add in tomatoes, tomato paste, sugar and seasonings.
- Bring to a boil, reduce heat and simmer 20 min.
- Cook pasta.
- Serve sauce over warm pasta, sprinkle liberally with Parmesan cheese.
- About 6 servings.
