Ingredients

  • 1 onion, minced
  • 1 lg. carrot, minced
  • 2 cloves garlic, chopped
  • 2 tbsp. extra virgin olive oil
  • 2 lg. (28 ounce.) cans crushed tomatoes
  • 1 tbsp. tomato paste
  • 1 teaspoon dry basil
  • 1 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pkg. spaghetti
  • Grated Parmesan cheese

Method

  • Cook and stir onions, carrots and garlic in warm oil in large skillet over medium heat till tender but NOT browned.
  • Add in tomatoes, tomato paste, sugar and seasonings.
  • Bring to a boil, reduce heat and simmer 20 min.
  • Cook pasta.
  • Serve sauce over warm pasta, sprinkle liberally with Parmesan cheese.
  • About 6 servings.
