Ingredients

  • 1 medium onion, chopped
  • 1/4 c. chopped green pepper
  • 4 c. water (divided)
  • 1 (15 or 16 oz.) can Great Northern beans, rinsed and drained
  • 1 (15 oz.) can navy beans, rinsed and drained
  • 1 (14 oz.) can diced tomatoes, undrained
  • 2 to 4 tsp. chili powder
  • 1 (6 oz.) can tomato paste
  • 1 tsp. salt (optional)
  • 1/2 tsp. pepper

Method

  • In a large saucepan, cook onion and green pepper in 1/2 cup water until tender.
  • Add rest of ingredients and seasonings and remaining water (3 1/2 cups).
  • Bring to a boil.
  • Reduce heat. Cover and simmer for 20 minutes.
  • Yields 7 servings.
