Ingredients
- 1 (9-inch) pie shell, baked
- 1 c. sugar
- 1/4 tsp. salt
- 1/3 c. cornstarch
- 3 c. milk
- 4 egg yolks, slightly beaten
- 4 Tbsp. oleo
- 1 tsp. coconut extract
- 1 c. Angel Flake coconut
Method
- Mix sugar, salt and cornstarch in a 2-quart microwave-safe bowl.
- Add milk and egg yolks.
- Mix well.
- Microwave at High power for 10 to 12 minutes.
- Stir after 5 minutes, then every 2 minutes until thickened.
- Stir in oleo, extracts and coconut.
- Pour into a baked pie shell.
- Top with meringue and bake at 350° for about 5 minutes or until brown.
