Ingredients

  • 1 c. sugar
  • 3 Tbsp. cornstarch
  • dash of salt
  • 2 c. milk
  • 3 eggs, separated
  • 1 oz. sq. unsweetened chocolate or 3 heaping Tbsp. cocoa
  • 1 Tbsp. butter or margarine
  • 1 tsp. vanilla extract
  • 1 baked 9-inch pastry shell
  • 1/2 tsp. cream of tartar
  • 1/4 c. plus 2 Tbsp. sugar

Method

  • Combine 1 cup sugar, cornstarch and salt in a heavy saucepan. Mix well.
  • Combine milk and egg yolks; beat with a wire whisk 1 to 2 minutes or until frothy.
  • Gradually stir into sugar mixture, mixing well.
  • Place over medium heat and stir constantly until thickened and bubbly.
  • Remove from heat.
  • Add chocolate, butter and vanilla extract, stirring until chocolate and butter melts. Spoon into pastry shell; set aside.
