Ingredients
- 1 lb. top sirloin, cut in 1 inch cubes
- 2 Tbsp. olive oil
- 1 Tbsp. lemon juice
- 1 Tbsp. water
- 2 tsp. Dijon mustard
- 1 tsp. honey
- 1/2 tsp. oregano
- 1/4 tsp. pepper
- 1 medium bell pepper, cut in squares (can use red, green or yellow)
- 1 medium onion, cut in chunks
- 12 large mushrooms
- salt, if desired
Method
- Whisk together the olive oil, lemon juice, water, mustard, honey, oregano and pepper in a large bowl.
- Add beef, bell pepper, onion and mushrooms, turning to coat.
- Thread onto skewers, alternating pieces.
- Season with salt.
- Grill or broil to desired doneness, turning occasionally.
- Makes 4 servings.
