Ingredients

  • 1 lb. top sirloin, cut in 1 inch cubes
  • 2 Tbsp. olive oil
  • 1 Tbsp. lemon juice
  • 1 Tbsp. water
  • 2 tsp. Dijon mustard
  • 1 tsp. honey
  • 1/2 tsp. oregano
  • 1/4 tsp. pepper
  • 1 medium bell pepper, cut in squares (can use red, green or yellow)
  • 1 medium onion, cut in chunks
  • 12 large mushrooms
  • salt, if desired

Method

  • Whisk together the olive oil, lemon juice, water, mustard, honey, oregano and pepper in a large bowl.
  • Add beef, bell pepper, onion and mushrooms, turning to coat.
  • Thread onto skewers, alternating pieces.
  • Season with salt.
  • Grill or broil to desired doneness, turning occasionally.
  • Makes 4 servings.
