Ingredients

  • 2 sheets shortcrust pastry ready-made
  • 5 Granny Smith apples large, peeled, cored, cut into chunks
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon or nutmeg
  • 1 large egg
  • 1 teaspoon milk
  • powdered sugar for dusting
  • cream to serve

Method

  • Preheat oven to 400°F. Grease a round pie dish and lay 1 sheet pastry in it. Trim to fit, line base with parchment paper and fill with dry beans. Bake 10 mins. Remove paper and beans and set aside.
  • For the filling, pour 1/2 cup water into a saucepan and add apple chunks, 1 tbsp sugar, vanilla and cinnamon or nutmeg. Cook over medium heat 10 mins. Drain excess liquid.
  • To assemble, spread filling evenly on pie base. Sprinkle with remaining sugar. Lay remaining pastry sheet on a lightly floured work surface and cut out a circle to fit top of pie. Lay over filling and press edges together to seal. In bowl, whisk egg and milk together with a fork. Brush on pie top. Bake 20-30 mins, until top is golden. Dust with powdered sugar and serve warm with cream.
