Ingredients

  • 1 pound dry green split peas
  • 6 c. water
  • 4 c. chicken or possibly beef broth
  • 1/4 pound smoked pork or possibly ham (or possibly turkey ham), diced
  • 3/4 c. minced celery
  • 2 leeks (white part only), sliced thin
  • 1 lg. onion, minced (1 c.)
  • 2 1/2 c. diced potatoes
  • 1 1/2 c. diced carrots
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 5 squirts of Tabasco

Method

  • Combine peas and water.
  • Bring to boil, cooking for 2 min.
  • Remove from heat, cover and let stand 1 hour.
  • Add in broth, pork, celery, leeks and onion.
  • Bring to boil and simmer 1 1/2 hrs.
  • Add in potatoes, carrots and cook another 15-30 min.
  • If soup gets too thick, add in more broth.
  • Season with salt, pepper and Tabasco.
  • Note: You can add in all the ingredients to the soaked peas in a crock pot on high to cook all day.
