Ingredients
- 1 pound dry green split peas
- 6 c. water
- 4 c. chicken or possibly beef broth
- 1/4 pound smoked pork or possibly ham (or possibly turkey ham), diced
- 3/4 c. minced celery
- 2 leeks (white part only), sliced thin
- 1 lg. onion, minced (1 c.)
- 2 1/2 c. diced potatoes
- 1 1/2 c. diced carrots
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 5 squirts of Tabasco
Method
- Combine peas and water.
- Bring to boil, cooking for 2 min.
- Remove from heat, cover and let stand 1 hour.
- Add in broth, pork, celery, leeks and onion.
- Bring to boil and simmer 1 1/2 hrs.
- Add in potatoes, carrots and cook another 15-30 min.
- If soup gets too thick, add in more broth.
- Season with salt, pepper and Tabasco.
- Note: You can add in all the ingredients to the soaked peas in a crock pot on high to cook all day.
