Ingredients

  • 5 boneless, skinless chicken breasts
  • 1 beer (either a red beer or a wheat beer)
  • 1 large onion or 2 small onions
  • 3 garlic cloves finely chopped
  • 1 container of fresh sliced mushrooms
  • 4 tbsp EVOO
  • 5 poached eggs
  • 1 Grill mates, belgian-style white ale seasoning mix (found in the spice section)

Method

  • Chop up onion and garlic and Sautee along with the mushrooms in a large pan with 2 tablespoons of EVOO until the onions are tender.
  • Halfway through the cooking process add a splash of red beer.
  • While the onions are cooking generously coat the chicken with the white ale seasoning
  • Remove the mixture from the pan and saute the chicken until it is cooked all the way through.
  • While the chicken is cooking poach your eggs.
  • Remove chicken and add about 1/2 cup of red beer, just enough to de-glaze the pan and and create a little sauce.
  • Add the chicken then the onion mixture back to the pan and cook until the sauce thickens and everything is heated thoroughly.
  • Place the poached egg on top of the chicken and serve with a side salad.
  • Very delicious and low carb!
