Ingredients

  • 3/4 lb. butter or 3 cubes
  • 1 c. granulated sugar
  • 3/4 c. brown sugar
  • 4 eggs
  • 1 tsp. vanilla extract
  • 1 1/2 lb. white chocolate baking chips or chocolate chips
  • 8 oz. dried cranberries (cranraisins)
  • 8 oz. chopped pecans
  • 4 c. all-purpose flour
  • 1/3 tsp. salt
  • 1/2 c. quick rolled oats
  • 1/2 tsp. cinnamon
  • 3/4 tsp. baking soda
  • 1 tsp. real lemon juice

Method

  • Preheat oven to 375°.
  • Cream butter and sugar; add eggs and vanilla. Beat at low speed until mixed. Combine dry ingredients in a separate bowl. Slowly fold flour into the butter mixture. Add lemon juice concentrate; blend well. Fold in white chocolate, cranberries and nuts.
