Ingredients

  • 6 onions, chopped
  • 1 tablespoon garlic
  • 1 tablespoon grated fresh ginger
  • 2 teaspoons paprika
  • 1 teaspoon chilli powder
  • 3 teaspoons ground cumin
  • 2 tablespoons ground coriander
  • 1 teaspoon salt
  • ⅓ cup plain yoghurt
  • 2 tablespoons ghee or oil
  • 1 kg diced lamb
  • 5 cardamom pods

Method

1. Place half the onion in food processor with garlic, ginger, paprika, chilli powder, cumin, coriander and salt. Process until mixture is smooth. Stir in yoghurt.

2. Heat oil in large pan; cook remaining onion until just soft. Add yoghurt mixture and stir over heat for 1 minute. Add the lamb cubes and cook until meat is well coated and starts to brown. Add cardamom pods and simmer, covered, for 1 hour or until lamb is tender.
