Ingredients
- 3 c. sugar
- 1 tsp. vanilla
- 1/2 c. light corn syrup
- 2 egg whites
- 1/2 c. water
Method
- Place sugar, syrup and water in pan over slow flame.
- Stir only until sugar is dissolved.
- Then cook until a soft ball forms (236°).
- Beat egg whites at #8 speed until stiff.
- Continue beating.
- Pour 1/2 of the syrup slowly over beaten egg whites. Cook rest of syrup until it forms a hard ball when dropped in a cup of cold water, until it cracks when hit against the side of a cup (280°).
- Add syrup gradually to the syrup and egg mixture.
- Add vanilla and keep heating until candy is thick enough to drop from spoon.
- Place the spoonfuls in buttered platters.
- Makes 35 to 40 pieces.
- Nuts may be added, if desired, just before candy is ready to spoon.
