Ingredients

  • 3 c. sugar
  • 1 tsp. vanilla
  • 1/2 c. light corn syrup
  • 2 egg whites
  • 1/2 c. water

Method

  • Place sugar, syrup and water in pan over slow flame.
  • Stir only until sugar is dissolved.
  • Then cook until a soft ball forms (236°).
  • Beat egg whites at #8 speed until stiff.
  • Continue beating.
  • Pour 1/2 of the syrup slowly over beaten egg whites. Cook rest of syrup until it forms a hard ball when dropped in a cup of cold water, until it cracks when hit against the side of a cup (280°).
  • Add syrup gradually to the syrup and egg mixture.
  • Add vanilla and keep heating until candy is thick enough to drop from spoon.
  • Place the spoonfuls in buttered platters.
  • Makes 35 to 40 pieces.
  • Nuts may be added, if desired, just before candy is ready to spoon.
