- 1 lb. pork sausage (mild or hot)
- 1 medium onion, chopped
- 1 green pepper, chopped
- 2 cloves garlic, chopped
- 1/2 lb. fresh mushrooms, chopped
- 4 to 5 chicken livers, chopped
- 4 green onions, chopped
- 2 c. cooked rice
- 1/2 c. parsley, chopped
- salt to taste
Method
- Brown sausage in a large skillet about 5 minutes.
- Add other ingredients except rice.
- Cook over medium-low heat until vegetables are very soft and lightly browned.
- Add cooked rice and stir well.
- Place in a covered casserole and bake 20 to 30 minutes at 350°.
