Ingredients

  • 1 lb. pork sausage (mild or hot)
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 2 cloves garlic, chopped
  • 1/2 lb. fresh mushrooms, chopped
  • 4 to 5 chicken livers, chopped
  • 4 green onions, chopped
  • 2 c. cooked rice
  • 1/2 c. parsley, chopped
  • salt to taste

Method

  • Brown sausage in a large skillet about 5 minutes.
  • Add other ingredients except rice.
  • Cook over medium-low heat until vegetables are very soft and lightly browned.
  • Add cooked rice and stir well.
  • Place in a covered casserole and bake 20 to 30 minutes at 350°.
